Pork Shrimp Veggie Stew with Mango

 




Pastured Pork Shrimp Veggie Stew w/ Mango


Ingredients:
3/4 lb pork belly sliced (pastured pork)
8 med. shrimps
1/4 c pork broth (From boiling pork)
1 T soy sauce
1 T red wine vinegar
1 t fish sauce
1 T siracha chili sauce
1/2 T mashed garlic with oil
1 med. bay leaf
1/2 t ground black pepper
1/2 t garlic granules
1 c frozen mix vegetables
1/4 c frozen mango chunks

Procedure

In a heated pot, put all the ingredients except the shrimps
Simmer
Add the shrimps
Serve warm with steamed rice cooked with banana leaves
Note: remove the banana leaves before eating the rice

Pork with Fennel & Tomato Salad


Pork with Fennel & Tomato Salad

Ingredients
2 c boiled pork cut in bite size pieces
1/2 c fennel sliced thinly
1/2 c grape tomatoes cut in half
1/3 c carrots sliced thinly
3 cloves garlic cut finely
1 & 1/2 in. ginger chopped finely
2 bayleaves
1/2 t dried basil
2 T olive oil
2 T vegetable oil
ground pepper as required

Dressing
1 T soy sauce
1 T lime juice

Procedure
Stirfry with oil , garlic, ginger, basil and pepper
Add all ingredients plus dressing
Cook until done
Serve

Meat Taco with 2 Kinds of Salsa




Meat Taco with Veggies

Ingredients
1/2 lb.ground 'pastured' pork
1/2 lb. ground 'pastured' beef
1 c diced carrots
1 c finely chopped broccoli
1/2 t cumin
1/2 t cinnamon
1/4 t salt
1 c water (for boiling the meat)

Procedure
Put the water and the meat in a hot pan.
Add the carrots and broccoli
Add the cumin, cinnamon and salt
Simmer until the water evaporates and the meat sizzles in its own oil.
Serve 3 T of meat on top of a corn (or flour or rice) tortilla.
Drizzle some salsa on top
Squeeze juice of 1/2 lime
Optional: Add avocado slices and cheese

Three Meat Sausage


Ingredients

1/2 lb. ground turkey 
1/2 lb. Ground beef
1/2 lb. Ground pork
1/2 pc. Yellow onion minced
2 T green onion chopped finely
2 T fresh basil sliced thinly
Salt to taste
1 T sheri vinegar
1 T cornstarch
vegetable oil for frying


Procedure
Mix all ingredients in a bowl
Shape into sausages
Fry in vegetable oil (with butter or without)
Enjoy

Meat Balls with Savory Coffee and Herbs de Provence


I don't drink coffee, but I saw this savory coffee with herbs de provence in the grocery store so I decided I will express myself using coffee in a dish.

Ingredients:
1/2 t savory coffee with herbs the provence spice
1/2 t  finely chopped fresh rosemary
7 med basil leaves sliced
2 eggs
2 small shallots chopped finely
1/4 lb ground turkey
1/4 lb ground lamb
1/4 lb ground beef
1/4 lb ground pork
1/2 t salt or to taste

Procedure:
Heat a pot with water on the stove
Put coffee in water
Add about 5 sliced basil
Combine the ground meat, eggs, salt and spices
Mix well
Shape the meat into balls by using an ice cream scooper
Add to the simmering water, basil and coffee
When cooked, spoon the balls into the coffee soup
Sprinkle the meatballs on top with ground almond and savory coffee with herbs de provence

'Nilaga'' Pork Stew With Bok Choy: Paleo: Philippine Stew

Ingredients:
4 and 1/2 cups water
1/2 tsp salt
1 baby Bok choy stalk
1/8 of a medium onion
1/8 of a small cabbage
1 slice (about 1 inch thick)
.95 lbs of boned-in pork chops (about 1 lb)
pepper to taste

The original dish does not have rice and is usually eaten with steamed rice. I added 2 tsp rice here (optional) while cooking as i do not plan to eat that much rice.

Procedure:
Heat a pot in low heat
Put the water and the pork in the pot.
Simmer for about 45 minutes in very low heat or until the pork is tender.
Add the onion.
(Add the rice at this point if you are cooking the stew with 2 tsp rice)
Simmer until the rice is cooked.
Add the plantain.
Simmer.
Add the cabbage and the Bok choy stems.
Turn off the heat.
Add the Bok choy leaves.
Cover the pot until the Bok choy leaves are cooked.
Serve with Braggs Liquid Aminos (or soy sauce) and lime juice as dipping sauce



Note: I used a little salt here because i used a dipping sauce while eating this dish made from Braggs Liquid Aminos (or use soy sauce) and key lime juice.

 Yield: 1 serving
