Fruit Salad with Pinenut Cream

Fruits:

Strawberries sliced
raspberries
blackberries
nectarines, sliced
mulberries
golden berries

Raw Fruit Salad Cream:

1 and 1/2 c cashews
1/4 c  Texas honey
1/2 c water
juice of 1 orange
1/2 c pine nuts

Procedure:
Blend all fruit salad cream ingredients
Refrigerate
Pour on the fruits
Serve

Tip: you can change the fruits. The cream is versatile

Pepperoni Basil Pizza




Pepperoni Basil Pizza

1 thin crust pizza base (pre-made)
1/2 c thai basil leaves
1/2 c red bell pepper cut into strips
1/2 c tomato basil pizza sauce (bought)
1/4 c grated mozzarella cheese
1/4 c grated parmesan cheese 
1/2 c sliced tomatoes
1/2 c left-over ham (home-made, low-sugar)
2 T olive oil
3 T pesto sauce (bought)

Procedure:
Put some olive oil on the thin crust pizza base .
(using my hands worked)
Add  tomato sauce and spread it throughout the pizza base.
Add pesto sauce and spread it towards the inside circle of the crust.
Spread the grated mozzarella cheese on the pizza.
Add the basil leaves, tomatoes, pepperoni and ham.
Add the red bell pepper strips.
Sprinkle the parmesan cheese on top.
Bake according to package directions (the one I bought says 400 degrees F for 12 minutes)
Serve warm.
Enjoy.

CASHEW CREAM SAUCE: RAW VEGAN

Ingredients:
1/3 c cashews 
(or 1/4 c cashews and 1/8 c macadamia nuts)
3/4 c water
1/4 tsp garlic granules
1/4 tsp onion granules
salt to taste

Procedure:
Blend all ingredients
Use as a sauce to meals

Blackberry Dressing or Sauce: Raw Vegan

How To Make A Blackberry Dressing or Sauce:

Ingredients:
1 c thawed frozen blackberries
1/2 teaspoon salt
1/2 teaspoon apple cider vinegar
2 teaspoons agave nectar
1/4 teaspoon garlic granules
1/4 teaspoon onion granules
chilli powder to taste

Procedure:
Put the blackberries in a blender
Blend
Strain with a very fine strainer or produce bag (from The Container store) to remove the fine seeds
Put the strained fruit puree in a bowl
Add the spices
Whisk to mix with a wire whisk
Put in a Squeeze bottle

USE:
Drizzle to fruit salads, veggie Salad or grilled meat



Put the blackberries in the blender
Blend


The blended blackberry puree


The blackberry puree strained



Add the chili powder (optional)
Add the garlic and onion granules and the rest of the ingredients
Mix with a wire whisk 


Put in a squeeze bottle


The blackberry sauce drizzled on a fruit salad


crushed blackberries can also be used as sauce drizzled on a smoked 'pastured' pork rib
