Crab In Coconut Milk: A Filipino Dish Called 'Guinatang Alimasag': Paleo

Crab In Coconut Milk
Ingredients:

For the Coconut Milk
1 pack frozen shredded coconut
1 c water
.45 lb wild snow crab clusters
6 garlic cloves crushed
3 T sliced green onions
1 small pork sausage sliced
1/4 of a medium sweet red pepper julienned
1 small carrot peeled and sliced
1 Tablespoon apple cider vinegar
(or coconut vinegar)
pinch chili powder (optional)

Notes:
a. If you are using canned or coconut milk in cartoons, use 1 and 3/4 c  
instead of the frozen coconut milk and water
b. If you are using powdered coconut milk, use 1 and 3/4 c water and add 1/2 c powdered coconut milk instead of the frozen coconut milk and water

Procedure:
Thaw the frozen shredded coconut
Put in a blender and add 1 c water
Blend
Put in a produce bag placed on top of a bowl 
(bowl is used to collect the squeezed coconut milk)
Squeeze the coconut milk from the shredded coconut meat 
Put the coconut milk in an empty pot
Add the rest of the ingredients in the pot
Add 1/2 tsp salt or to taste
Simmer until the coconut milk thickens

Sauteed Vegetables
Note: I ate the crab with mixed vegetables instead of steamed rice

Ingredients

1 c broccoli florets chopped in small pieces
1/4 c water
1/8 c green peas
1 teaspoon Braggs Liquid Aminos
(or soy sauce)
Pinch of granulated garlic
1/4 of a medium sweet red pepper 
1c spinach
1 teaspoon oil

Procedure:
Put water in a pot
Put the green peas in the pot
Add the  soy sauce, granulated garlic and 1 teaspoon oil
Add the sweet red pepper and 1c spinach
  (or sliced Asian greens like 'Pechay or Kangkong')
Saute, mix and cook until done.

Walkthrough #1:
 Squeezing the coconut milk from the shredded coconut flesh:

Note: If you are using canned, coconut milk in cartoons or powdered coconut milk, skip this part


Thaw the frozen shredded coconut
Put in a blender and add 1 c water
Blend


Put in a produce bag placed on top of a bowl 
(bowl is used to collect the squeezed coconut milk) 


Squeeze the coconut milk from the blended coconut meat 
Set Aside

Putting everything Together: Procedure With Pictures



Slice the green onions


Mash the garlic



Add the green onions and garlic to the pot with coconut milk


Add the sliced pork sausage 


Add the sweet red pepper


Add the white button mushrooms and sliced carrots


Add the crab clusters (or alimasag) when the coconut milk boils 


 Simmer until coconut milk thickens, about 10 minutes 
(depends on your stove)
Set aside

Walkthrough #3:
Making the Veggies


Broccoli fllorets


Chop 1 c broccoli florets


Put 1/4 c water in a pot
Put 1/8 c green peas in the pot
Put 1 teaspoon soy sauce, pinch of granulated garlic and 1 T oil


Add the sweet red pepper and 1c spinach
  (or sliced Asian greens like 'pechay')
Saute, mix and cook until done.

Walkthrough #4
To Serve:


Put the sauteed veggie mix on a plate
make a hole in the center and put the crab with coconut milk in the middle
Serve. Enjoy.

Note:
 This is normally eaten in the Philippines with steamed rice, so you can do that too or eat it with other side dishes.

Walkthrough #5
To Open the Crab Shell:

Put the shell in a mortar and pestle and smash the leg until the flesh comes out a bit.

Expose the flesh by peeling off the shell.
Serve, eat and enjoy.

Warning: Do not eat the shell of the crab. It can block your throat.
